Plano runs deep on corporate-relocation dining and the suburban-immigrant corridors north of LBJ, and E B Latin Bistro sits in that same quiet depth: a small, owner-run Cuban room that draws return customers the way neighborhood restaurants are supposed to. The thesis here is not spectacle but consistency, the kind of place where the paella arrives properly cooked and flavored because the kitchen has been cooking it for the same faces long enough to get it right.

The Ropa Vieja is the anchor dish, the slow-braised shredded beef that functions as the Cuban kitchen's signature measure. Done well, it is straightforward and satisfying without requiring explanation. The Cuban Sandwich brings the same logic: pressed, layered, proportioned correctly. Neither dish is trying to reinterpret anything, and that restraint is the point. The Paella Valenciana rounds out the signature trio and represents the room's upper register, a longer commitment on the plate that the kitchen handles with attention to texture and seasoning.
